Fårikål
Fårikål (lamb in cabbage). Your cabbage should be cut into quarters. In a casserole dish, layer chunks of lamb and cabbage in alternating fashion. Add as much salt and pepper as you dare, then cover and bake for three hours. The basic ingredients for most stews—lamb and cabbage with water, salt, and pepper—seemed too straightforward to me. The majority of recipes I had seen lacked sufficient details. I refrained because I reasoned that mistakes must be simple to make. I began working on this meal that had previously terrified me this past spring, encouraged by a deadline and a task to complete. As Norway's Friklens Festdag, the frikl feast day,I was aware that I would have to write about it and share a frikal recipe because it was approaching in the fall (it's always the fourth Thursday of September). I was The Norwegian American's food editor at the time, and as such, I didn't feel it was appropriate to outsource our coverage of this yearly tradition one more time.
These granola bars are straightforward, chewy, and soft. They are great as is, but you can also modify them to include your preferred chocolate, nuts, or dried fruit.
Ingredients
- 1.5 kg/ 3 pounds of lamb or mutton
- 1.5 kg of cabbage.
- 5 dl of water.
- 4 whole black peppercorns in a teaspoon.
- 2 teaspoon salt
Instructions
STEP 1:
Large wedges of cabbage should be cut.
STEP 2:
In a pot, arrange the meat and cabbage in layers, beginning with the meat. In between each layer, season with salt and pepper.
STEP 3:
Add liquid to the water. Bring to a boil, then reduce heat and let the pot simmer for about two hours, or until the meat is so soft that it falls off the bone.

This dish is quite delicious, and it becomes better the second or third day. Serve it with flatbread, cooked potatoes, and a beer that is locally made. You'll benefit from it and feel like you're eating a little bit of Norway!
