Although you can always go to a steakhouse for dinner and call it a night if you're in the mood for steak, these recipes show that a spectacular, restaurant-quality steak is also very doable at home.This is simply a fantastic marinade for beef steaks that adds flavour and juiciness, elevating inexpensive steaks from "okay" to "wow!". It tenderises the meat and adds flavour without dominating the natural flavour of beef. Like wine, the more you pay, the finer the steaks become. Juicier, more flavorful, and more tender, with no stray chunks of sinew.
INGREDIENTS:
- 2 steaks inexpensive
MARINADE
- 1 tablespoon Dijon mustard
- 1/2 teaspoon minced garlic (one large clove),
- 1/2 teaspoon onion powder,
- 1 tablespoon oil (I use olive oil, but any oil is acceptable),
- 1 tablespoon Worcestershire sauce,
- 1 tablespoon balsamic vinegar, and black pepper.
PROCEDURE:
STEP 1:
Mustard, garlic, and onion powder should all be combined. Add the remaining ingredients and combine.
STEP 2:
Overnight, marinate meat in a ziplock bag with the marinade (12 - 24 hours).
STEP 3:
To ensure consistent cooking of the steaks, remove from the refrigerator 30 minutes before cooking. Shake any extra marinade off.
STEP 4:
Grills should be oil-brushed before being heated on high heat until very hot and beginning to emit smoke. Alternately, heat a heavy skillet on high until it is extremely hot before adding oil; the oil will start to heat almost immediately.
STEP 5:
Put steaks in. For 2cm/ 3/4" thick steaks, cook the first side for 2 minutes, then flip the steak over and cook the second side for 2 minutes (medium rare 52°C/ 125°F; see the chart below for different doneness temps).
STEP 6:
Remove from skillet onto a WARM dish, loosely cover with foil, and let stand for 5 minutes.
STEP 7:
