Lokma or lokum, the Turkish word for this delight, means
morsel, and that is exactly what these sweet squares are: a gently chewy treat
that is properly sweetened and infused with either rosewater, bergamot, lemon,
or mastic for an intriguing and sweet flavour. Dates, pistachios, hazelnuts,
and walnuts are mixed together to form a gel-like substance that is then
flavoured with additional ingredients and tinted with food colouring or organic
components. The squares are typically offered by the pound or in fanciful,
colourful boxes with several flavours, and are sprinkled with icing sugar,
cream of tartar, or copra (dried coconut meat) to prevent sticking and caking.
However, the majority of Americans were unaware of that when
we first read the novel. All we knew was that if a strange and elegant woman
asked you, "What would you like to eat the most," you would
immediately say, "Turkish Delight." And we knew that Edmund loved
that Turkish Delight so much that he would risk his siblings' safety and the
safety of the entire Narnia in order to obtain more. (In fairness, it was
magical. However, Edmund. Still.) As a result, we ended up imagining whatever
we preferred. Comparable to gazing into the Mirror of Erised from Harry Potter,
but with desserts: What comes to mind when you consider a treat that is worth
betraying your family for? Egyptian Delight.
Ingredients..
neutral-tasting oil for the tray
500g of sugar in granules.
1/2 teaspoon cream of tartar
120g of cornmeal + additional for dusting.
if not using rose syrup, 12 tsp rosewater or 2 tbsp rose
syrup pink food colouring.
Dust with icing sugar.
Procedure..
STEP 1
A shallow 18 x 18 cm square metal or silicone baking pan
should be greased. In a pan, add the sugar, cream of tartar, and 500 ml of
water. Heat gently while stirring to melt the sugar. Then, increase the heat
and boil the mixture for 10 to 15 minutes, or until it becomes slightly more
syrupy. A sugar thermometer should read between 115 and 118C if you have one.
STEP 2
Mix the cornflour
with 150 ml of water before pouring it into the sugar syrup while constantly
stirring. Continue whisking until the mixture becomes a smooth, gloopy
consistency. Remove the whisk and begin stirring with a spoon or spatula over a
moderate heat. Continue churning the mixture until it becomes thick enough to
see a straight line drawn through it with a spoon and begins to pull away from
the pan's sides. Be careful since it will be very thick and produce large
bubbles that will burst as it boils. This could take an hour. Test the mixture
by dropping a tiny amount into extremely cold water; when the mixture is cool
and solid, it should form a ball that can be gently pressed.
STEP 3
Pour the mixture into the tray and smooth the top after
stirring in the food colouring, if using, and rosewater or rose syrup. Leave to
totally cool and set. Turkish delight should be carefully flipped out onto a
board covered with cornflour and icing sugar. Use a sharp knife to cut it into
cubes before covering it with additional icing sugar and cornflour. The pieces
should be separated so they can dry before being dusted with additional of the
icing sugar mixture. Can be kept for up to a week in open containers or little
cardboard boxes or bags.
